Madbasa: The UAE’s Traditional Method of Crafting Date Syrup (Dibs)
In the UAE, Madbasa refers to a traditional heritage room and artisanal method used to naturally extract and preserve date syrup, locally known as dibs. Over approximately 90 days, the natural heat and pressure slowly extract the syrup from the dates. The liquid seeps downward and is collected as dibs a remarkably dense, dark syrup with a complex, caramelised sweetness.
Dibs is a staple in the Emirati diet and is commonly drizzled over traditional desserts such as Luqaimat or paired with breads like Khameer. It is also enjoyed with cheese, mixed into coffee, or used as a natural sweetener in various dishes.
